The weekend is the perfect time to make this easy sourdough flatbread pizza! They are so tasty, kid-friendly, and sure to be a hit at your next gathering. Now that spring is here, and the sun is peeking out longer, this meal would be perfect for an outdoor gathering.

Starting Your Sourdough Flatbread
This recipe involves my sourdough starter recipe, and I do recommend making sure that it is active (has been fed/doubled in size). For this recipe, I feed my starter the night before. You could also do an early morning feed if you need to! Just ensure that it has doubled by the time you want to use it.
Next up- it’s time to start that flatbread dough!
Add all of the sourdough starter, flour, water, salt, butter, and honey to a stand mixer. Start with the mixer attachment paddle, and stir on low speed until combined.



Switch out the paddle for the dough hook attachment, and knead the dough until smooth for about 5 minutes. You will notice a difference in texture when the dough is ready! While it is kneading, take some olive oil and coat a large bowl with it. Take the dough and swirl it around in the bowl lightly to cover it in oil, and gently set the dough in the middle of the bowl.

Cover with wrap (plastic or bees wax wrap!), and place in the oven (with no heat on!). Placing it in a turned-off oven will keep the dough warmer. If you are shorter on time, turning on the oven light will speed up the process a bit! Let the dough rest for 6-10 hours (or until doubled).



Cooking the Flatbread
After the dough has doubled, take it out onto the counter and separate it with a bench knife (or regular knife). This recipe makes about 15-16 dough balls. Start with the dough ball, divide it in half (and then divide those pieces in half, etc.) until you get around 16 pieces of dough that are about 2-3 inch balls. Roll them all out with a rolling pin and get your griddle ready!



Heat up the griddle to about 325/350*F (or a cast iron pan), and get ready to put on the flatbread dough. My griddle can hold about 3 flatbreads. Place them on the griddle, and let them sit for about 5-7 minutes per side. Just check to see when your dough starts to brown.
Take them off and set them on a plate to rest while the others finish cooking. Preheat the oven to 375*.

Get all of your toppings prepped and cut up. Brush the pizza sauce on the flatbread pizza, and top with your shredded mozzarella. This is where it gets fun!
Pizza Topping Ideas

Topping the pizzas is one of my favorite parts of this recipe! There are so many fun ideas and things that you can try. This is also a point where you can get your kids involved- I mean, who doesn’t love a good pizza party?! Here is a list of some of our favorite topping combinations (all of these are with a pizza sauce/shredded mozzarella base):
- Browned butter caramelized onions and mushrooms (heat up a good pad of butter and saute the mushrooms and onions for about 12-15 minutes)
- Mini Pepperoni + Pineapples
- Pineapple + Onion + Pickled Cherry Peppers
- Prosciutto Arugula + Balsamic drizzle
- Sausage + Mushroom
- Bacon + Black Olive
- Sausage + Bell Pepper
- Roasted Red Pepper + shredded Basil
- Pesto Base (instead of pizza sauce) + mini Mozzarella Balls + Roasted Red Peppers

The possibilities are endless! It is so much fun coming up with fun toppings for these sourdough flatbread pizzas. My kids especially like the pineapple additions, so that is why I listed a bunch of those recommendations.
Place the sourdough flatbread pizza on sheet pans and place in the oven for 8-10 minutes (cheese has melted and golden). Take out of oven and place on serving ware (I used a bunch of wooden cutting boards!). Next, just cut with a pizza cutter and serve! We had this meal with our friends this last weekend, and it was incredible! There wasn’t much pizza left over.
